Trim the ends off the zucchini and slice it lengthwise into 1/4" thick pieces. If you are working with giant zucchini, you may want to slice it in half as well. If you have a mandolin handy, this can make slicing zucchini into uniform pieces easier.
Sprinkle the sliced zucchini with salt.
In a mason jar, combine the marinade ingredients and shake well to combine.
In a shallow dish, or resealable bag, combine zucchini and marinade. Cover and place in fridge.
Marinate the zucchini for 30 minutes or up to 2 hours before you plan to grill.
Preheat grill to about 500°. Remove marinated zucchini from fridge and place strips directly on hot grill.
Cook on each side for 3-4 minutes, flipping carefully with a pair of tongs.
Serve hot!
