Balsamic Beef and Carrot Stew

Equipment

  • Instant Pot / Pressure Cooker

Ingredients
  

  • 2 lbs beef stew meat
  • 3 celery stalks diced
  • 1 yellow onion roughly chopped
  • tsps salt
  • ¼ tsp pepper
  • ¼ cup balsamic vinegar
  • 13.5 oz can fire roasted diced tomatoes
  • 1 lb waxy potatoes cut into 2" pieces
  • 4 large carrots cut into 2" pieces
  • ½ cup water

Instructions
 

  • If needed, cut stew meat into evenly sized pieces. You want them to be about 2" chunks.
  • Add beef to instant pot and sprinkle with salt and pepper
  • Top beef with diced onion, celery, tomatoes and balsamic vinegar.
  • Place lid on instant pot and turn vent to seal. Pressure cook for 45 minutes.
  • Quick release the pressure. Stir the stew contents. Then add carrots, potatoes and water to the pot.
  • Return lid to instant pot and turn vent to seal. Pressure cook for 2 minutes.
  • Quick release the pressure.
  • Taste for seasoning.

Notes

It helps to run the lid and seal of the instant pot under cool water when pressure cooking back to back. This allows the silicone to contract and create a better seal.
