In a large mixing bowl, whisk together egg, peanut butter, coconut sugar and vanilla until smooth.
Fold in chocolate chips.
Using a cookie scoop, drop dough onto parchment lined baking sheet.
Chill cookie dough for 30min to 1 hr in fridge.
While dough is chilling, preheat oven to 325°F
Remove dough from fridge. Using a fork, flatten dough balls with fork, making a hashtag on top.
Bake for 10-12 minutes, just until edges turn golden. Do not overbake! Cool completely on baking sheet before transferring to an airtight container.
