Easy Peanut Butter Chocolate Chip Cookies

  • 1 cup peanut butter or unsweetened nut butter of choice
  • 1 egg
  • 2/3 cup coconut sugar or brown sugar
  • 1 tsp vanilla
  • 1/2 cup chocolate chips


  • In a large mixing bowl, whisk together egg, peanut butter, coconut sugar and vanilla until smooth.
  • Fold in chocolate chips.
  • Using a cookie scoop, drop dough onto parchment lined baking sheet.
  • Chill cookie dough for 30min to 1 hr in fridge.
  • While dough is chilling, preheat oven to 325°F
  • Remove dough from fridge. Using a fork, flatten dough balls with fork, making a hashtag on top.
  • Bake for 10-12 minutes, just until edges turn golden. Do not overbake! Cool completely on baking sheet before transferring to an airtight container.
