Apple Cardamom Crumble

Simple, grain-free dessert perfect for the holiday table! Top with your favorite vanilla ice cream, whipped cream or whipped coconut cream!

Ingredients
  

  • 4 large apples peeled, cored and thinly sliced
  • 1 tbls organic granulated sugar
  • Juice from 1/2 lemon
  • 2 large medjool dates
  • 1 cup boiling water
  • 4 oz pecans
  • 2 oz almond flour
  • 2 tbls coconut sugar
  • 1/2 tsp cardamom
  • 2 tbls butter or coconut oil

Instructions
 

  • Preheat oven to 350F
  • In a large bowl, combine the apple slices, lemon juice and 1 tbls of granulated sugar. Mix and set aside.
  • In a small bowl, combine dates with boiling water. Allow to soak for 5-10 minutes, until very soft.
  • Once dates are soft, roughly chop them into small pieces.
  • In the bowl or a food processor or blender, pulse pecans, dates and coconut sugar into a large crumble.
  • Add almond flour and cardamom and pulse until well combined.
  • Layer the apples in an 8x8 glass baking dish.
  • Spread the crumble texture on top of the apples.
  • Dot the top of the crumble with butter.
  • Bake for 35-40 minutes, until apples are bubbling.
  • Serve warm, top with vanilla ice cream or whipped coconut cream!
