Breakfast Pizza Crust
Use this paleo pizza crust as your base for any breakfast pizza variation

- 4 plantains green, with a bit of yellow. Do not use ripe plantains.
- 1/4 cup olive oil
- 1 egg
- 1 tsp Italian seasoning
- 1 tsp salt
- 1 tbsp coconut flour
Preheat oven to 375°. Line a baking sheet with parchment paper.
Peel plantains and chop into 3 inch chunks
Add plantains, olive oil, egg, salt and seasoning to food processor and puree until smooth.
Once smooth, add coconut flour and puree for another 30 seconds.
Divide batter into 4 even discs on parchment lined baking sheet. Spread the mixture 1/4-1/8" thin, leaving the edges a little thicker. This helps hold the pizza toppings. It's easiest to spread the batter with the back of a spoon or a spatula.
Bake for 15 minutes, then remove from oven.
