Breakfast Pizza Crust

Use this paleo pizza crust as your base for any breakfast pizza variation

Ingredients
  

  • 4 plantains green, with a bit of yellow. Do not use ripe plantains.
  • 1/4 cup olive oil
  • 1 egg
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1 tbsp coconut flour

Instructions
 

  • Preheat oven to 375°. Line a baking sheet with parchment paper.
  • Peel plantains and chop into 3 inch chunks
  • Add plantains, olive oil, egg, salt and seasoning to food processor and puree until smooth.
  • Once smooth, add coconut flour and puree for another 30 seconds.
  • Divide batter into 4 even discs on parchment lined baking sheet. Spread the mixture 1/4-1/8" thin, leaving the edges a little thicker. This helps hold the pizza toppings. It's easiest to spread the batter with the back of a spoon or a spatula.
  • Bake for 15 minutes, then remove from oven.
