Bacon & Egg Breakfast Pizza

Ingredients
  

  • 1 batch paleo breakfast pizza crust
  • 1 tbsp olive oil
  • 2 eggs
  • 4 pieces thick cut bacon
  • 1/4 cup cheddar cheese, shredded
  • 2 green onions, diced
  • fresh cracked pepper

Instructions
 

  • Prepare the paleo pizza crust.
  • While the crust is baking, prep the toppings.
  • Cook the bacon in a heavy bottomed skillet. Remove from pan and chop into 1/2" pieces.
  • Whisk 2 eggs with 1/4 tsp salt.
  • When pizza crusts have finished cooking, remove from oven and turn heat to 425°. Brush each pizza with olive oil.
  • Divide bacon and cheddar cheese evenly among the crusts.
  • Top with whisked eggs.
  • Return to oven and bake for another 10 minutes.
  • Garnish with green onions and fresh cracked pepper.
