Sausage and Mozzarella Breakfast Pizza

Ingredients
  

  • 1 batch paleo breakfast pizza crust
  • 1 tbsp olive oil
  • 1/4 lb ground breakfast sausage
  • 1/4 cup grated mozzarella
  • 1/4 cup red onion, diced
  • fresh cracked pepper
  • 2 eggs
  • 1/4 tsp salt

Instructions
 

  • Prepare the paleo breakfast pizza crust.
  • While crust is cooking, brown sausage over medium heat in a heavy bottomed skillet. Remove from pan and crumble.
  • When crust is done cooking, remove from oven and turn heat to 425°.
  • Brush each pizza crust with olive oil and then top with sausage, cheese, and onion.
  • Whisk the eggs with salt and divide evenly pouring onto each pizza crust.
  • Return pizzas to oven and bake for 10 minutes.
  • Top with fresh cracked pepper.
