Preheat oven to 400° and line two baking sheets with parchment paper.
Slice sweet potatoes into 1/4-1/2" thick fries. Try to make them as even in size as possible.
In a large bowl, whisk together the spices, lime juice, oil. Using your hands, toss with sweet potato slices to evenly coat.
Turn seasoned sweet potatoes out onto the rimmed baking sheets. Arrange in a single layer with a bit of space around the fries. The spaces helps the fries crisp up instead of just steam.
Roast for 20-25 minutes, turning fries over halfway through baking time.
