Preheat oven to 350°. Grease an 8X8 glass baking dish or line with parchment paper.
In a large mixing bowl, combine almond and coconut flours, ground coffee, cocoa powder, and coconut sugar. Stir until well combined.
Create a well in the center of the dry ingredients and mix in melted butter, egg, vanilla, honey and peppermint extract. Stir until just combined.
Fold in chocolate chips.
Spoon batter into prepared baking dish and smooth into an even layer.
Bake for 20-23 minutes, remove from oven and allow to cool completely before serving.
Optional: top these fudgey brownies with chocolate coffee frosting and peppermint stick pieces!
