Paleo Peppermint Mocha Brownies

Ingredients
  

  • 1.5 cups almond flour
  • 2 tbsp coconut flour
  • 1/4 cup cocoa powder
  • 2 tbsp very finely ground coffee or use instant coffee like Starbucks VIA pack
  • 1/4 cup coconut sugar
  • 1 tsp vanilla
  • tsp peppermint extract
  • 1/2 cup butter melted
  • 1/4 cup honey
  • 1 egg
  • 1/2 cup dark chocolate chips
  • Sea salt to garnish

Instructions
 

  • Preheat oven to 350°. Grease an 8X8 glass baking dish or line with parchment paper.
  • In a large mixing bowl, combine almond and coconut flours, ground coffee, cocoa powder, and coconut sugar. Stir until well combined.
  • Create a well in the center of the dry ingredients and mix in melted butter, egg, vanilla, honey and peppermint extract. Stir until just combined.
  • Fold in chocolate chips.
  • Spoon batter into prepared baking dish and smooth into an even layer.
  • Bake for 20-23 minutes, remove from oven and allow to cool completely before serving.
  • Optional: top these fudgey brownies with chocolate coffee frosting and peppermint stick pieces!
