Paleo Peppermint Mocha Brownies

Ingredients
  

  • 1.5 cups almond flour
  • 2 tbsp coconut flour
  • 1/4 cup cocoa powder
  • 2 tbsp very finely ground coffee or use instant coffee like Starbucks VIA pack
  • 1/4 cup coconut sugar
  • 1 tsp vanilla
  • tsp peppermint extract
  • 1/2 cup butter melted
  • 1/4 cup honey
  • 1 egg
  • 1/2 cup dark chocolate chips
  • Sea salt to garnish

Method
 

  1. Preheat oven to 350°. Grease an 8X8 glass baking dish or line with parchment paper.
  2. In a large mixing bowl, combine almond and coconut flours, ground coffee, cocoa powder, and coconut sugar. Stir until well combined.
  3. Create a well in the center of the dry ingredients and mix in melted butter, egg, vanilla, honey and peppermint extract. Stir until just combined.
  4. Fold in chocolate chips.
  5. Spoon batter into prepared baking dish and smooth into an even layer.
  6. Bake for 20-23 minutes, remove from oven and allow to cool completely before serving.
  7. Optional: top these fudgey brownies with chocolate coffee frosting and peppermint stick pieces!
