Pesto Breakfast Pizza

Ingredients
  

  • 1 batch paleo breakfast pizza crust
  • 8 tsps pesto
  • 1/2 small zucchini diced
  • 1/4 c diced red onion
  • 2 eggs
  • 1/4 tsp salt
  • Fresh cracked pepper

Instructions
 

  • Make the paleo breakfast pizza crust.
  • While crust is cooking, prep your topping ingredients.
  • When crust is finished, remove from oven and turn the temp up to 425°
  • Spread 2 tsps of pesto on each pizza crust. Divide the zucchini and red onion evenly among the crusts.
  • Whisk eggs with 1/4 tsp salt. Divide egg mixture evenly among the crusts.
  • Return pizzas to oven to bake for 10 minutes.
  • Finish with fresh cracked pepper.
