Pesto Breakfast Pizza

Ingredients
  

  • 1 batch paleo breakfast pizza crust
  • 8 tsps pesto
  • 1/2 small zucchini diced
  • 1/4 c diced red onion
  • 2 eggs
  • 1/4 tsp salt
  • Fresh cracked pepper

Method
 

  1. Make the paleo breakfast pizza crust.
  2. While crust is cooking, prep your topping ingredients.
  3. When crust is finished, remove from oven and turn the temp up to 425°
  4. Spread 2 tsps of pesto on each pizza crust. Divide the zucchini and red onion evenly among the crusts.
  5. Whisk eggs with 1/4 tsp salt. Divide egg mixture evenly among the crusts.
  6. Return pizzas to oven to bake for 10 minutes.
  7. Finish with fresh cracked pepper.
