Apple Cardamom Crumble

Simple, grain-free dessert perfect for the holiday table! Top with your favorite vanilla ice cream, whipped cream or whipped coconut cream!

Ingredients
  

  • 4 large apples peeled, cored and thinly sliced
  • 1 tbls organic granulated sugar
  • Juice from 1/2 lemon
  • 2 large medjool dates
  • 1 cup boiling water
  • 4 oz pecans
  • 2 oz almond flour
  • 2 tbls coconut sugar
  • 1/2 tsp cardamom
  • 2 tbls butter or coconut oil

Method
 

  1. Preheat oven to 350F
  2. In a large bowl, combine the apple slices, lemon juice and 1 tbls of granulated sugar. Mix and set aside.
  3. In a small bowl, combine dates with boiling water. Allow to soak for 5-10 minutes, until very soft.
  4. Once dates are soft, roughly chop them into small pieces.
  5. In the bowl or a food processor or blender, pulse pecans, dates and coconut sugar into a large crumble.
  6. Add almond flour and cardamom and pulse until well combined.
  7. Layer the apples in an 8x8 glass baking dish.
  8. Spread the crumble texture on top of the apples.
  9. Dot the top of the crumble with butter.
  10. Bake for 35-40 minutes, until apples are bubbling.
  11. Serve warm, top with vanilla ice cream or whipped coconut cream!
