Blueberry Basil Limeade

Ingredients
  

  • 5 Limes juiced or enough to equal 1 cup lime juice
  • Scant 1/4 cup honey
  • 1 cup blueberries
  • 3 cups water
  • 1/4 cup basil leaves
  • Sparkling water to serve

Method
 

  1. In a high speed blender, combine the lime juice, blueberries, basil leaves and 1 cup of water. Blend until smooth.
  2. Heat the remaining two cups of water and bring to a simmer. I like to use my electric kettle to save time with this step. In a medium bowl, whisk the honey with the simmering water and continue to mix until dissolved, creating a simple syrup.
  3. Allow to cool for 10-15 minutes.
  4. Add the cooled simple syrup to the blended blueberry mixture and blend until combined.
  5. Using a mesh sieve, strain the limeade into a pitcher. Discard the pulp.
  6. Chill in fridge until ready to serve.
  7. To serve, fill a glass with ice and fill halfway with blueberry limeade and top with sparkling water!
  8. Garnish with a basil leaf if youre feeling fancy.
  9. Cocktail Variation: Add 1 ounce of vodka to large glass and top with limeade and sparkling water.
