Loaded Instant Pot Pumpkin Oats

Ingredients
  

  • 1/4 cup pumpkin puree
  • 4 tbsp pumpkin seeds
  • 4 tbsp hemp seeds
  • 1 cup quick cooking steel cut oats
  • 4 cups almond milk
  • 2 tbsp coconut oil
  • 1/2 cup raisins or dried dates
  • 1 tsp pumpkin spice
  • 2 tbsp maple syrup (adjust to your taste)

  • Instant Pot

Method
 

  1. Add all ingredients to instant pot. Stir well to combine.
  2. Pressure cook on manual setting for 4 minutes.
  3. Allow pressure to release naturally (it takes about 10 minutes)
  4. Remove lid and stir.
  5. Spoon into bowls and top with additional maple syrup, if desired.
