Rosemary Roasted Potatoes

Ingredients
  

  • 2 lbs red potatoes
  • 2 tbsp olive oil
  • 1/2 sweet onion diced
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • 1 tbsp finely chopped fresh rosemary plush more for garnish

Method
 

  1. Preheat oven to 400°F
  2. Prep ingredients: Halve and quarter potatoes. Dice onions.
  3. Toss potatoes and onions with salt, pepper, olive oil, and garlic powder. Place in a single layer on a rimmed baking sheet or glass pan. Sprinkle with rosemary.
  4. Roast for 20 minutes. Remove from oven. Stir and flip potatoes.
  5. Return to oven and roast for another 20 minutes, until potatoes are tender and crisp on the outside.
  6. Garnish with remaining rosemary. Taste for salt and pepper.
