Our popsicle game is strong around here. I especially love these paleo Very Berry Creamsicles because they are intentionally packed these with plenty of nutrient dense ingredients, like creamy coconut milk, antioxidant rich berries, and gut healing collagen peptides. When I was pregnant with my first kiddo, popsicles got me through some gnarly morning sickness all the way through third trimester sweet treat cravings. After my summer babe was born, popsicles were a great one-handed nursing fuel. There seem to be lots of barriers to eating exactly how you want during pregnancy and early postpartum, so making something as simple as popsicles a whole-food, nutrient dense snack is a lifesaver.
These berry creamsicles call for Vital Proteins Vanilla Collagen Creamer. This is one of my favorite products from Vital Proteins; it combines powdered coconut milk, real vanilla bean and collagen peptides from grass-fed cows. You can find it online or in stores, in single serve packs or in bulk containers. If you have single serve packs, you’ll need two for this recipe.
These popsicles get all their natural sweetness from the berries and coconut, making them a great kid-friendly treat!
4scoopsVanilla Collagen Creamer or two tsp vanilla extract
1cupfull fat coconut milk
Instructions
In a high speed blender combine the berries coconut water and coconut milk. Blend until smooth
Add the collagen peptides or vanilla and blend for an additional 15-30seconds.
Pour into popsicle molds
Freeze for at least 4 hours and then enjoy!

Tips
No popsicle molds? Use a muffin tin! Pour into muffin tin freeze for 1 hour, add wooden popsicle sticks and return to freezer for another 2 hours or overnight.
Can’t get your hands on Vanilla Collagen Creamer? You can swap in 2 tsps of vanilla extract. It won’t be quite as creamy, but it will still be delicious.
