Flavorful everything bagel seasoning takes the classic chicken salad to a whole new level. With crunchy celery and juicy grapes, this dish is picnic perfection. I am pretty much obsessed with the Everything But the Bagel Seasoning from Trader Joes. I throw that shit on everything– grilled veggies, eggs, ice cream, you name it. Okay not actually ice cream, but you get my point.
Problem is, I go through it fast, which can be expensive and generate a lot of waste. So I started whipping up my own version of the spice blend. It’s incredibly easy to make and gives a POW of flavor to this Everything Bagel Chicken Salad. The basic gist of everything bagel seasoning is poppy seeds, sesame seeds, onion flakes, garlic flakes, salt and pepper. If you want to get super fancy, you can use a mixture of black and white sesame seeds, but I’m all about keeping this simple.
Most grocery stores have a bulk spice section and you can grab all of these ingredients there for a fraction of the cost of purchasing the bottled versions. In fact, we rarely buy any spices in jars anymore. We either bring our jars to refill or fill the provided little bags and empty into jars at home. It’s a HUGE cost saver. (We’re talking $0.80 for a full jar of cumin). It’s also an economical way to try out new spices or herbs. Many of you mentioned you were new to the dill scene when making my Roasted Dilly Carrots. Rather than buying an entire bottle of something you aren’t sure about, you can buy just what you need to try it out!
Keep this salad quick and easy to assemble by using leftover rotisserie chicken. Remove the skin and chop the chicken into bite size pieces. There’s no science to this, you won’t f*ck it up, promise. Rotisserie chicken is also one of the most economical ways to buy a whole chicken, plus it’s cooked! Be sure to save the carcass for bone broth.
Everything bagel chicken salad is perfect to pack for lunch, alongside some GF pita bread or served in lettuce cups. It will keep for 2-3 days in the fridge (and tastes even better the second day).
