But most of the grain-free/paleo versions out there just don’t have the crisp that I’m looking for OR they weigh a ton of bricks! This is where cassava flour really helps us out! This is a minimally processed starchy flour made from… you guessed it, cassava root (also called yuca)! I really like Otto’s Cassava Flour (find it on Thrive Market for the best price!) and Anthony’s Cassava Flour. It’s clearly pricier than standard flours, but it’s totally worth it for a tasty treat. Plus it’s great for folks who can’t do nut-based treats.
Serve these with some warm butter or ghee and maple syrup or top with fruit compote and whipped coconut cream!
