These grain-free sugar cookies are light, airy and melt in your mouth, like a little cloud! These cookies make use of some high-quality greek yogurt to give them their light, airy texture and slight tang.
Wrap them up as gifts for neighbors or friends, or serve at your holiday party!
My sweet friend Ruth totally gets credit for the name of these cookies— she tested a batch for me and described them as little clouds. Sold!
Christmas Cloud Sugar Cookies
Fluffy little cloud cookies, made with a blend of cassava and almond flours, are light, airy and melt in your mouth!
Makes: 24 cookies
4 oz salted butter, softened
3/4 cup granulate white sugar, divided
1 tsp vanilla extract
1/2 cup full-fat unsweetened greek yogurt or strained full-fat yogurt.
1 cup cassava flour
1 cup almond flour
1 tsp baking soda
In the bowl of a stand mixer, cream together the butter and 1/2 cup of sugar.
Add egg and vanilla and beat on medium-low until well combined and creamy
In a separate bowl, whisk together cassava flour, almond flour and baking soda.
Add half the flour mixture to the bowl of the stand mixer and beat on low until well incorporated.
Add 1/2 cup of greek yogurt to mixer and continue to mix.
Add remaining flour mixture and mix until just combined. The batter will be soft.
Chill batter in fridge for at least an hour.
When ready to bake, preheat oven to 375F
Remove chilled batter from fridge.
Add 1/4 cup granulated sugar to a small bowl.
Shape chilled dough into golf ball size pieces and roll in granulated sugar.
Place 2-3 inches apart on a parchment lined baking sheet.
Bake for 8-10 minutes
Allow to cool for 2 minute on the sheet after removing from oven. Transfer to wire rack to cool.
