We love making a big batch pulled pork because it’s incredibly versatile and reheats well. Want tacos? Crisp it up, top with lettuce and pico, and throw it in a Siete tortilla! Craving BBQ? Drizzle your favorite bbq sauce on top. Need to jazz up breakfast? Reheat the pork in a cast iron pan with a couple handfuls of greens, and top with a fried egg and some pickled veg.
So if you want pulled pork, but don’t have hours and hours to wait for the slow cooker, your Instant Pot can come to the rescue here! Pairing the pork shoulder with apples and onions highlights the natural sweetness of pork. Pork shoulder cooks beautifully in the instant pot, falling apart with just over an hour of pressure cooking. Extra bonus, this meal has maybe 10 minutes of hands on time. So if you have your hands full with kiddos like we do, this is a simple way to get a big dish prepped.
Instant Pot Apple Pork Shoulder
Makes: 6 servings
3lb Boneless Pork Shoulder
2 tsps coarse sea salt
2 medium apples
1 large red onion
3 cloves garlic
1/3 cup water
Pat pork shoulder dry and sprinkle with sea salt. Place in instant pot.
Cut onions and apples into 1/2″ thick slices
Peel and smash garlic
Surround pork shoulder with sliced onions, apples and smash garlic.
Add 1/3 cup water to pot.
Place lid on Instant Pot, ensuring it’s set to seal.
Pressure cook on high for 75 minutes, allowing the pressure to decrease naturally when time is up.
When pressure has released, carefully remove the pork shoulder from the pot and transfer to a large plate.
Shred meat with two forks. If it doesn’t come apart easily, you can pressure cook for an additional 10-15 minutes.
Return meat to pot with cooking liquid. Taste for salt and adjust to your preference
Serve shredded, topped with apples and onions. Or crisp meat in a hot cast iron pan before serving!
