Everyone loves tacos, right?! This quick and easy paleo taco recipe uses bell peppers as the shell, creating a boat for your taco! Tacos are a favorite in our house. Sometimes we’ll splurge on our favorite grain-free tortillas from Siete Foods, but more often than not we are picking up our taco fixings wrapped in veggie of some sort. We’ve used lettuce and jicama, but bell peppers are our new favorite taco shell. The bell pepper boats are cooked long enough to get a char on the outside, but still maintain their structural integrity.
Paleo Bell Pepper Taco Boats come together in twenty-five minutes or less. The super simple recipe is kid-friendly, featuring our flavorful but not too spicy homemade taco seasoning. We loving adding our cilantro lime cauliflower rice to the boats, but you can use real rice if you prefer.
When beef is cooked, add 1 cup water to hot pan and stir to lift any stuck browned meats. Add the tomatoes, taco seasoning and arrowroot powder to the pan and mix to thoroughly combine.
Reduce heat and allow to cook down for 10 minutes.
While beef is cooking (and cauliflower rice is doing it's thing!), prep the peppers. Slice bell peppers in half, lengthwise. Remove and discard seeds. Set pepper shells on rimmed baking sheet.
Turn oven to Broil.
Spoon cauliflower rice into taco shells and top with beef. Divide evenly among the peppers. Sprinkle each pepper taco with cheese if using.
Place sheetpan in oven and broil tacos for 3-5 minutes until cheese is bubbling and peppers start to char.
